Loaded Cauliflower Breakfast Bake
1 large head of cauliflower
8 slices of chopped
10 large eggs
1 cup whole milk
2 cloves of minced garlic
2 tsp paprika
Kosher salt
Freshly ground black pepper
8 ounces (2 cups) shredded shredded cheddar
2 green onions sliced thin
Using a box grater, grate the head of cauliflower and spread it evenly on the bottom of a large baking dish.
Cook the bacon in a skillet over medium high heat until crispy, then drain. (A paper towel lined plated works well to drain the bacon)
Mix together the eggs, milk, garlic, and paprika in a large bowl. Season with salt and pepper to taste.
Spread the cheddar cheese, bacon, and green onions evenly onto the cauliflower.
Pour on the egg mixture, again spreading evenly.
Bake at 350ºF until the eggs are set and the top is golden brown, about 35 to 40 minutes.
