Slow Cooker Barbecue Meatloaf

2 lbs lean ground beef

1 lb lean ground pork

1/2 cup onion

1/2 cup almond flour

1 tsp each salt, pepper, garlic powder

2 large eggs

1 cup sugar free bbq sauce

Combine everything except the barbecue sauce in a large bowl. Mix well with your hands until thoroughly combined.

One a large sheet of tin foil, shape the mixture into a loaf roughly 5 inches by 9 inches.

Lifting the foil by the edges place into slow cooker.

Cook on low for 5 to 6 hours.

Brush the top and sides with 1/3 cup of barbecue sauce during the last half hour of cooking.

Using serving forks, lift the meatloaf out of the slow cooker and onto a serving platter. Slice and serve topping with the remaining sauce if desired.

Important note: Leaner meat works better but if you can’t use lean meat, then a rack or balled up tin foil should be used in the bottom of your slow cooker. Otherwise your meat loaf will be swimming in grease by the end of cooking.
